Omega 3 Rich Cacao and Coconut Cake

200g Oats (guten Free)

40g Cacao / cocao powder

120g Organic Butter

200g Brazil Nuts & 100gm Pumpkin seeks ( other nuts can be used or leave out if nut intolerant )

200g organic coconut sugar

100g Rice Four ( optional )

3 large Organic  Eggs or 1 tsp Xanthan / or Guar Gum for a  vegan version to replace eggs

Method

1.Blend each separately : Oats, Brazil nuts and pumpkin seeds in a blender ( I use my kitchen aid or Vita mixer)

2.Add dry ingredients in a large mixing bowl( oats, ground nuts, cacao,Coconut sugar)

3. Melt butter in separate pan on low heat- add to mixture

4. Add eggs ( mix in large glass or bowl ) add to mixture and mix well  / Add Xanthan or Guar Gum if Vegan version and stir in well

5. Add Organic milk or alternative milk choice and stir well

6. Mixture should be able to mix around but slopping

7.  Grease Loaf Tin and line with grease proof paper- turn out mixture into the loaf tin

8. Bake on gas mark 6 or 200 degrees for 40-45 mins

9. Let tin cool down- slide a knife around the edge and  turn out.

10. EAT for an alternative breakfast or afternoon omega rich snack enjoy- will keep in air tight container for 7-10 days

This is a really nice cake to serve to kids friends or anyone who might pop in for a cuppa.  Or to take into the office or for colleagues a who are being good and eating healthy food.

Food facts of why these are in my recipe: 

Pumpkins- high in magnesium and great for combating stress and rich in omega 3 which is an essential oil our body cannot make and needs in the winter months.

Brail nuts are also Omega 3 rich and come mainly form the amazon.  Great for there anti inflammatory properties and rich source of selenium which can help to lift the mood and used in supporting people Mental health and beneficial to sleep and regulating brain chemicals.  So great to give moody children or for people going through emotional trauma.  Brazil nuts have been researched as helpful in  combatting free radical damage like so many other food.

Cacoa

Helpful in combatting free radicals ( e.g pollution, toxic chemicals and unhealthy foods that many people know about but still eat them.  These are known to release free radical activity into the body or produced by other lifestyle factors such as stress, which can damage healthy tissue. Cacao is rich in antioxidants so eating it is reported to reverse this process and particularly helpful when combatting disease as it takes care of and rids the body of the  harmful free radicals.

Coconut Sugar- a alternative to sugar ( your choice) .  Coconut sugar comes from the sap of the cut flowers of the coconut palm. It does not contain the actual coconut fruit, which is the part from which most beneficial coconut products are derived.  I use it as its a alternative as a low GI product and definitely  lower than table sugar on the Glycemic Index (GI).

Organic Butter- clarified and used in cakes makes it more stable than many oils and is an essential fat for all kids who need 3 time more fat than adults for metabolism.  Butter is rich in a number of trace minerals including  selenium as  said earlier is a powerful antioxidant and  butter has more selenium per gram.
Other important attributes of butter is that it  supplies iodine which is needed by our thyroid gland and  contains vitamin A which is also needed by the thyroid gland.
It goes on..Butter also contains conjugated linoleic acid (CLA) which gives excellent protection against cancer.  A study of  Organic Free Range fed  cows showed that they produced especially high levels of conjugated acid; and a no brainer to eat ORGANIC.  Butter is also  rich in the short and medium chain fatty acids chains  which  have been researched as anti-tumor effects e.g  the conjugated linoleic acid  protection against cancers.
