An Easy and Quick Brunch Idea
I bought the Ricotta at a local market so it was very fresh during my holiday in Italy. I had one for breakfast- couldn’t resist! Then later with salad for my lunch, the masala gives it a very subtle hue of spice and I think complements the recipe very well.
Interestingly, this recipe could be eaten cooked or raw as the ingredients used have many benefits for health either way.
Great for a light lunch or breakfast or light evening meal. Ideal for any age as these Fritters are very soft and moorish.

Ingredients for Ricotta Fritters
For the fritters
- Approx 6 oz of fresh ricotta
- 2 handfuls of seasonal spinach
- a pinch of Sea salt, Masala and black pepper
- 1 small onion
- 1/2 chilli chopped finely

Serving Ideas for Ricotta Fritters
(I had these for lunch !)
- with a lettuce and red pepper and watercress salad lightly dressed or
- A Bean salad
How to make Ricotta Fritters – The Method

Chop spinach finely , Chop Onion finely and add ricotta – place all the ingredients, in a bowl and mix well with your hand. Season as desired. Set in fridge for 20 minutes if you have time or use immediately.

Make small round balls and flatten to look like fritters – 3-4 inch in diameter each .

Heat a little olive oil in a large frying pan over a medium heat. Cook in batches for 3 minutes on each side until golden brown, adding more oil if necessary.
- place in oven for a further 10 mins
One last point worth noting is in my recipe, I didn’t use eggs to bind but if you prefer to you can. I liked the way they came out and a little more of a deconstructed recipe!
