Rubuen’s Birthday Brownies

This is a recipe I made for my son’s 16th Birthday.  He insisted that he did not want a birthday cake.  This was sad for me as the long tradition of making cakes for birthdays are changing  in my house.  My daughter too on her 16th asked for the same!! Although she’ll be 18 in October so we’ll see what she wants this year as she is intended to have a party!

I love making my own cakes and this one is full of antioxidant rich chocolate so technically really good for us.

To make this recipe you can use any tin as long as it’s approx  22cm  in diameter. I used a small roasting tin. line with parchment paper for the best results.  always us parchment as  without  it, it sticks to the bottom and will become a big mess.

Ingredients for  Birthday Brownies

Organic butter 100g, chopped

Dark organic chocolate 200g, chopped

4 Large eggs

Coconut sugar 250g

Plain flour 100g or Ground Almonds ( mine has ground almonds)

baking powder 1 tsp

Organic cocoa  or Cacao Nibs 30g

Some variations to add if you wish:

  • Dark chocolate chunks 100g, chopped
  • hazelnuts, walnuts – 100g, toasted, roughly chopped
  • pecans 100g, toasted, roughly chopped
  • Sesame Seeds 50gm

Method for Birthday Brownies

Step 1 : Heat the oven to 180C/fan 160C/gas 4.

 

Step 2: Line a 22cm square brownie tin with baking parchment. Melt the butter and chocolate together in a microwave or in a bowl set over a pan of simmering water. Cool to room temperature.

 

Step 3: Whisk the eggs and sugar together until the mixture is light and fluffy.

Step 4: Fold the chocolate mixture into the egg mixture and sift in the flour, baking powder and  melted Butter & cocoa.

Step 5: Fold to make a  fudgie textured batter.

Step 6 : ( add  optional additional ingredients : as above –  I used Walnuts and Dark Choc for mine).

Step 7: Bake for 25-30 minutes or until the top of the cake cracks and the  middle  is moist but set. Check by inserting a fork for consistency.  Cool then lift out of the tin and cut to required sizes.  If your in a hurry or you like it warm-  take it out and use a long knife to cut to precisely so it does not crumble.

Optional Textured Icing – Old Fashion style Frosted Icing

INGREDIENTS for Old Fashioned Butter Icing

Add the following ingredients and whisk up 

1 cup butter (2 sticks), softened, room temperature

½ tablespoon Organic Double  cream – whip it up

1 bar of organic dark chocolate melted – pour in

2 large spoons of  Green & Blacks cocoa powder, sifted

INSTRUCTIONS

Cream up using a large spoon-

Refrigerate for 15 mins-  serve with brownies and Fresh seasonal Fruit-  We had Raspberries.
