Easy to assemble and Gluten and Vegan and there is no Baking apart from the Quinoa

Easy Carrot Cardamon Quinoa Healthy Snack Bars
These are an excellent thing to have around the house for anyone who wants a little sweet but without the rush. Highly nutritious and protein rich. These are rich in fibre, gluten-free and vegan and make a great on-the-go breakfast or snack for anyone who needs them!
Ingredients
- 3 organic medium carrots, washed well and chopped (~1 cup)
- 10 large pitted organic medjool dates
- 1/2 cup organic raisins
- 1 1/2 cups cooked organic quinoa, cooled
- 1/2 puff Kallo rice
- 2/3 cup organic walnuts
- 1/2 inc Grated Ginger
- 1/2 cup unsweetened shredded coconut
- 2 tsp ground cinnamon
- 1 tsp cardamom pod – crushed
- 1 tsp pure vanilla extract
- For the frosting:
- 2/3 cup raw cashews, soaked 2-3 hours and rinsed
- 4 tsp coconut oil, melted and cooled
- 1 tsp lemon juice
- 1 tsp pure vanilla extract
- 5 tsp maple syrup or Ghoor 1 inches
Method
- Line an 8×8″ baking dish with parchment paper so that there are “tabs” on two of the sides. Set aside.
- Add dates and raisins in a large bowl with warm water : soak for 10-15 minute – this helps them soften. Drain and set aside.
- While the fruit is soaking, make the frosting. Add all frosting ingredients to a small food processor and blend until smooth and creamy. Set aside
- Add grated carrots, ginger and cardamon to the bowl of a large food processor and pulse or finely chop for (about 5 seconds). Add the rest of the carrot cake bar ingredients (plus the soaked fruit after draining) add to the food processor and pulse until they look well combined, scrape the sides so you have a even texture.
- Transfer the mixture to the pre prepared baking dish and add the kallo puff rice at the last moment. Add the cashew to the frosting and grated carrots or crushed walnuts (optional).
- Store in an airtight container in the refrigerator for 5-7 days or in the freezer for up to 3 months. They will be eaten quickly so might not even last 7 days!!
- for an extra touch – melt dark chocolate and drizzle on top of the frosting – YUM!!!
