Courgette and Parmesan Fries

Serves 6-8 people as an accompaniment to a meal


6 courgettes 

For Batter mix:

1 cup of Gram flour – Chick pea flour

100 grams of parmesan

1-2 tsp smoked paprika added to the gram flour 

1.5 tsp milled pepper

1-2 Eggs – beat the eggs and mix with courgettes


Cut the courgettes into even lengths 8cm x 1cm thickness (sticks). Season the flour with lemon salt, pepper, cumin, chilli flakes and fresh paprika. Roll each courgette stick in the flour/ Parmesan /Paprika/ Pepper mixture – coat each stick well.  You could also add parmesan first then coat in gram flour for more crunch!


Add parchment paper to a oven tray and begin to put the courgette sticks on the tray

BAKE in oven on 200 degrees for 25 – 30 mins until they look : crisp and golden. 

Take out of the oven and place on kitchen paper – season with fresh lemon juice, milled pepper, & eat immediately!  Serve with a main meal/dish. or as a starter with cheese strips.
